Valentine’s day is a special day to celebrate our loved ones and also a day we get to celebrate ourselves. It’s a day when love permeates the air and hearts skip a beat as people everywhere show their admiration for one another in a variety of charming ways.  Valentine’s day is a day to honor and celebrate love in all its manifestations, including love between family members, friends, lovers, coworkers and even in our church communities. It serves as a gentle reminder to treasure the people in our lives and to show our gratitude for the love they bestow upon us.

Valentine’s Day has its historical roots in the Lupercalia festival, which was held in the middle of February in ancient Rome. Inspired by the story of St. Valentine, a priest who disobeyed Emperor Claudius II’s ban on young men getting married, the festival has grown throughout time into a celebration of romance and love. While incarcerated for his deeds, Valentine is said to have fallen in love with the daughter of his jailer and wrote her a letter bearing the signature “From your Valentine,” a phrase that endures to this day.

Over the years, there has been a confusion over whether Valentine’s Day should be the exclusive occasion for celebrating love, or if it should become a regular occasion? Whether it’s Valentine’s Day or not, we are commanded by biblical standards to love one another always (John 13:34)

I learned about Valentine’s Day in primary school while growing up in Nigeria. There was a custom at my school where students would bring wrapped gifts to class and trade them with other students, teachers, or office employees. I was aware of this celebration since I was seven years old. We learned how to give from it, and I’ve carried that lesson with me ever since. It also taught me to be appreciative of the presents that I get from others, particularly in situations where I am unable to repay the favor.

This is also a day when upscale and casual dining establishments see exceptionally high sales. On this day, couples, friends, families, and even coworkers fill restaurants.

Are you on a tight budget this period or are you just tired of the hustle and bustle of the restaurant when you wait for your food?. Do you prefer to spend quality time with your loved one at home? Or perhaps your loved one is an essential worker scheduled to work this day and the thought of surprising them crosses your mind? Don’t look any further. I am about to give you a recipe for two meals that could be made and served as breakfast or for brunch.

Have you heard of dodo frittatas?

Valentine

Dodo frittatas is a nigerian dish that takes about 30-45 mins to make. It can be served during breakfast or brunch time. Here are the ingredients needed to make this delicious dish

  1. Ripe plantain ( you can choose to use unripe one too, it’s up to you)
  2.  Sausage (beef, chicken, pork etc)
  3. Bell peppers (mixture of yellow, green and red)
  4. Onions
  5. Chunky tuna fish
  6. Eggs
  7. Groundnut oil
  8. Foil pan with cover

The second recipe is the love shaped waffles. Below are the ingredients you need:

Valentine
  1. Flour
  2. Butter
  3. Egg
  4. Strawberries
  5. Bananas

Making dodo frittatas should not cost more than $40 to get the ingredients for 4 people to eat while waffles ingredients should not cost more than this as well for a family of 4.

Here is a link to my YouTube video showing how it is made from scratch. Enjoy.
